The best information ever, anywhere on how to cook eggs is in Delia Smith's How To Cook volume 1, or the compendium of all 3 volumes:
http://www.amazon.com/How-Cook-Delia-Smith/dp/B00008MNWD/ref=sr_1_2?ie=UTF8&s=books&qid=1270587284&sr=8-2
It's worth buying the book for just that chapter, but there is lots more besides.
*sigh*
I love eggs... forget breakfast, all the time! They're my go-to meal any time of day. I've even hooked my 2.5 year old on eggs 'round the clock. Love this post.

Has anyone ever noticed the mosaic of egg shell colors: brown, white, speckles, and my favorite the blue-green eggs made by the Americana hens.
So lovely!
I love eggs and I especially love soft boiled eggs -rich inside and hard on whites mixed with salt and pepper mmm- in my weekend breakfast.
Nothing compares to fresh off the farm eggs, even if they are $8/dozen.... The "cage free" at the stores are a distant runner up. Just because they advertise that, they can still have 1,000 chickens crammed into a small area laying eggs that are not technically in a cage.
Favorite egg dish: The lyonnaise salad at Bouchon restaurant in Santa Barbara, CA. YUM!!!! Hmmmm, maybe I will make this salad this weekend....
I wish I liked eggs. They always taste rotten to me. :(
