What better way to celebrate the green shoots and pink blooms of spring than with an outdoor meal of the season's most iconic produce? We're thinking bright green asparagus, thin slices of pink radish, tender peas and tart rhubarb — get ready to grab a blanket and head outside! A sandwich of hard-boiled eggs, fat asparagus spears and pickled onions on a crusty baguette travels well, along with a thermos of bright green fresh pea soup to stave off any early spring chills. A mayonnaise-free red potato salad with crunchy radishes, smoked olive oil and ponzu is a surprising twist on the usual, while a non-alcoholic sparkling rosemary limeade is an herb-infused alternative to lemonade.
