Happy Pancake Day! I started thinking about this delightful food and realized how much my pancake memories are tied to family and friends – giggly slumber party mornings in friends' kitchens, the happy surprise when Mom served breakfast for dinner, and the imperfect yet never more satisfying flapjacks cooked over a campfire with my boyfriend. Pancakes needn't be ruled out for everyday breakfasts, but there does seem to be something special about them.
