There are occasions when layer cakes are really in order. Big birthdays, anniversaries, or graduations often warrant a towering cake. And then there are times when your standard chocolate cake recipe just won't do. When it's time to really knock it out of the park, s'mores do the trick.
I've made a five-layer birthday cake once for a roommate in college, but I've never gone beyond that. And five-layers felt decadent and over-the-top at the time until I stumbled across this 7-layer s'mores cake boasting 2 brownie layers, 2 cheesecake layers, 2 chocolate chip cookie layers, marshmallow frosting, chocolate frosting and graham crackers.
In a season filled with pumpkin desserts, I always find it refreshing to dabble in chocolate and off-season flavors. A break from pumpkin is always welcome. So while this cake is obviously a treat and a significant time commitment, it's season-less in its appeal and looks most memorable for your next special occasion. Or for an average night with a very special chocolate-lover.

I made this and was...underwhelmed. I wish it tasted more like smores. It SOUNDS amazing, but I think it's just a little bit too much. The individual flavors of the recipes are minimized and it just doesn't stand out the way I wanted it to. It's also a LOT of work, so I really wanted it to be amazing. Unfortunately it just didn't meet my expectations.
