Can i just say a serious THANK YOU for these lunch week features?! Lunch is my least favorite meal, and I always have such a struggle to find recipes/meals I actually want to eat. These articles are all so very helpful.
Best idea for easy packed lunch? Pack all your dinner leftovers in lunch-friendly containers (i'm partial to wide-mouthed pint jars) instead of in one big storage container. Then in the morning you can just grab your leftovers and go. If you're feeling leisurely, a piece of fruit or dessert can accompany it. Dead easy.
I pre-cook individual servings (the one that I just haven't gotten tired of yet is turkey/zucchini meatloaf muffins) and freeze them, then toss into my lunch bag either the night before, if I'm organized, or the morning of otherwise. I have little snack sized stuff - 100 cal popcorn, tiny container of nuts, hummus, 90 cal Nutella container, add-water dried black bean soup - and throw them in to round it out. And then sometimes I decide "enh not today" and buy lunch anyway :)
i do what vintagejenta does with pretty much everything i take to work - bonus is that many meals can be heated and eaten straight out of the container!
just cook a bit of extra when you're making dinner and you're set. instead of 85 grams of pasta like i'd have for dinner, i cook 55-60 grams and bulk out the rest with fruits and veg. worst case scenario, black beans plus half an avocado, salad from the grocery store (using half the pack of light italian dressing), or fruit and yogurt if i'm not too hungry.
