Stir fry beef with nectarines! Love cooking with meat with fruit.
Yesterday I cooked pan-seared salmon (with a delicious rub I picked up at Whole Foods), with honey roasted sweet potato cubes sprinkled with cinnamon sugar (leftover from snickerdoodle attempts). Today it's tilapia with squash & zucchini from my CSA!
i have a four foot long squash from a coworker's garden. she says it's similar to zucchini, but sweeter. she suggested stir frying it with garlic & oil, but i'm not a huge fan of zucchini cooked that way (is limp and watery to me), so was thinking along the lines of a creamy pureed soup with thyme.
anyone have any suggestions?
last night i made the summer corn chowder that was posted last week. i added potatoes and shredded to chicken to make it a little heartier. so good! i'm going to the farmers' market today and will make a salad with whatever i find there for tonight's dinner, topped with grilled chicken.
as for the question about the sweet zucchini: what about using it for zucchini bread?
Yesterday it sauteed tofu,garlic,onions, and garden fresh diced tomatoes seasoned with chili powder, sweet hungarian paprika, crushed red pepper, cumin salt and pepper accompanied by oven roasted fries and a mixed salad. Tonight it will be some Puerto Rican style yellow rice with strips of red pepper with pink beans and butternut squash and some fried sweet plantain.
I have an equipment question. I was considering buying a Kitchen Aid food processor, mostly for shredding vegetables, mixing dough, and blending. But then I started looking at the VitaMix blender, and people claim that it can do all of that and then some. How does it compare to a food processor and if I had to choose between the two, which one should I go for?
I picked up a bunch of heirloom tomatoes at the farmers' market last week and needed to do something with them quick! I made an Heirloom Tomato Galette with Red Onion Jam in a flaky pie crust. It was so easy!
