I've got midterms this coming week, so I've bribed the bf to make his amaaaaazing beef bourgignon on Sunday to keep my strength up for studying. (It's going from 50 degrees today to 10-20 degrees on Sunday, so a warm comfort food will be much loved.)
I've been in a baking mood, but there is no flour in the house. We had a lot of fruit to use, some Seckel pears and a mango, so I diced them up, sprinkled on a little sugar, and then substituted a raspberry scone mix for the flour to bake up a lovely pear and mango (and raspberry by default) crisp. It's extremely tasty with a dollop of vanilla bean ice cream.
I'm roasting a chicken and made a stuffing out of minced onion, ripped up French bread, chopped parsley, grated pecorino cheese, and raisins. I'm serving broccoli rabe for a side, which I'll blanch and then sautée in garlic, oil, and a squeeze of lemon juice.
I'm also going to make broth from the carcass and use it somehow for dinner tomorrow. Maybe risotto or maybe just for the base of a soup.
Soup made from tortellini, turkey meatballs, peas, onions, and chicken broth. It's hearty in the dreadful cold weather we're getting.
I think I'll make raisin bread in the bread machine, too.
I roasted a pork shoulder stuffed with guava, prunes and bacon and covered in brown sugar and malt soda. Served with pine nut pilaf.
Damn!
Lots of delicious ideas. Roasted chicken has got to be my favorite sunday dinner and Lula is the name of one of my favorite restaurants! bitchincamero--sounds cuban?
I made a couple pizzas on Trader Joe's famous bagged pizza dough. Anchovy and mozzarella and a pepper, onion and caper. Turned out really nice. Especially in my oven which has a bottom heat feature so I can get the crust nice and crisp without a pizza stone.
