I do that with vanilla, too. And most of the sweet spices, though I'm a little more careful with cloves and ginger.
I love cinnamon, too! But be careful when using a lot in fruit desserts...sometimes it gives your filling a snot-like consistency.
I always double or even triple vanilla, but yeah, too much cinnamon can screw up the consistency of a dish. That said, I think cinnamon has some healthy compounds in it, so ... more cinnamon!
So what is the point if she didn't even talk about the results?

Cinnamon is the best spice EVAR. It's not only good for eating, it's good for making your house smell heavenly. I have a teapot just for simmering a mixture of water, apple slices, cinnamon, nutmeg, and cloves. I'd wear cinnamon perfume if it existed! I'm sure Cinnamon Sugar Essence would drive men wild.
