As if we needed anymore tempting recipes for sweets, I've just remembered the existence of truffles. And how much I love them. And how easy they are to make. And then eat. My apologies in advance.
At heart, truffles are really just a wee ball of rolled chocolate ganache. But that's really only the beginning. You can make truffles infused with spices, mixed with dried fruit, dosed with bourbon, rolled in crushed candies, and a nearly infinite number of other superlative ideas.
And because they're just one bite, we can try them all. Right? Right.

With all of these gorgeous truffles staring back at me, I might forgo the holiday cookie spree and just make boxes of these. Look out!
So, so timely. I'm going to make the raspberry ones for the hubs for Christmas. Thanks Kitchn!
Liquid caramel in a hollow chocolate shell, just like the ones Alice Medrich used to offer at her now-gone SF Bay Area Cocolat shops, you had to pop the whole thing in your mouth or it would dribble down your chin. Those raspberry ones, mentioned above, are great too.
I brought truffles to a holiday dinner party with friends last night. Rolled in different coatings, the guests could choose their option.
Delish!
Love this truffle collection! Thank you for including my Mayan truffles to the mix! Happy Holiday's!
