I first made cookies using olive oil two Christmases ago, when we were hosting a vegan family for the holidays. They were a traditional Greek cookie that's shaped into twists and spirals, making for a beautiful display. They were so delicious it led me on a hunt for other olive oil cookies:
Here are some of the best I turned up, from the traditional to the not-so-traditional. Some of these are terrific options for vegan sweets:
- Koulourakia Portokaliou: Citrus & Spice Cookie Twists from Nancy Gaifyllia
- Krasokouloura: Wine Cookies from Nancy Gaifyllia (these are the ones I made - they're crispy and not too sweet. A little like biscotti).
- Olive Oil Cookies from the New York Times (these are completely savory)
- Lemon Scented Olive Oil Cookies with Almond Glaze from Joy the Baker
- Orange-Hazelnut Olive Oil Cookies from Fine Cooking
- Olio Nuovo and Lemon Cookies from SavorSA
- Cocoa Olive Oil Crinkle Cookies from Too Much Food
- Olive Oil Shortbread Cookies from There's Always a Reason to Bake

Mark Bittman has a great olive oil cookie with saffron in How to everything vegetarian. Page 842. Not too sweet, and a wonderful color!
Perfect, I was just yesterday looking for a good olive oil cookie recipe. Thanks!
