All three of these recipes come from Ina Garten, and she seems like someone who would know her pot pies. We think she's one of the best when it comes to simple, familiar, "Yes! That's exactly what I'm craving!" types of food.

I am one of those freaks who can't stand chicken pot pie! So when my husband came home one night with what looked like mini-pot pies, I nearly choked. But to my wonderful surprise, they were not chicken but instead salmon! And WOW! They were stupendous! I'm still not a fan of the chicken, but I'll take the salmon anytime!
Scuse me for being terribly Pennsylvania Dutch, but pot pie is a thick soup made with square egg noodles and chicken broth, chicken, etc. What you have above are chicken pies.
Just being technical and I know the term is used all over the world for the above, but it's wrong! Wrong I tell you! (rant over)
Salmon pot pie sounds great.
I make chicken pot pie, but I have celiac's so I use mashed potatoes in place of the pastry for a chicken pot pie/shepherd's pie mash-up. It works pretty well (and is conveniently lower in calories.)
Why does the vegetable pie call for chicken stock?! I know I can substitute vegetable stock, but why can't chefs be vegetarian-friendly and just write the recipe to include vegetable stock or broth? I see this all the time, and it just irks me!

I tried the vegetable pot pie recipe a few days ago and it was great. I left out the Pernod and saffron (my only problem with Ina is how dang expensive her ingredients are...), and substituted fresh green beans for asparagus because I had them on hand. I also swapped Ina's pastry crust for the parsley drop biscuits from the lemony chicken pot pie in Faith's casseroles book because I didn't feel like rolling out pastry dough. I added some lemon zest to the biscuits since I didn't have any in the dish. It was a great combo!
