
Made in the Perigord region of France, these paring knives look like they would feel just right in the hand. They are handmade by artisans in Perigord, with tempered steel blades and handles made from boxwood and decorated with woodburned figures. The seller says that the knives have been made in Perigord since the 15th century. $27.50 at The Gardener.

What kind of care is required for tempered steel? I'd be wary of anything that isn't stainless...
For non-stainless, typically one needs to clean and dry the knife soon after cutting anything acidic. Also, don't leave the knife sitting wet, lest it rust and/or discolor.
Don't forget that the disadvantage of stainless steel is that it's more difficult to sharpen.
So, so beautiful. Worth the need for more thoughtful care, I'd bet...
These are wonderful and easy to care for and cut with surgical precision.
