This Is How You Feed Chicken Fajitas to a Crowd

Whether you're following a Paleo diet or not, Nom Nom Paleo's blog is full of delicious, easy-to-assemble recipes. Take these sheet pan chicken fajitas, for example. Instead of standing at the stovetop sautéing ingredients, you can throw them all on one pan and let them do their thing in the oven.

We've covered a lot of sheet pan meals here on the site, but what I love most about this recipe is how the author, Michelle Tam, uses a stainless steel wire rack for more even cooking. When placed directly on the sheet pan, the chicken and veggies end up getting steamed in their own juices that release during cooking. If you use a metal rack, however, all those juices drip down and you avoid a soggy mess.

While the sheet pan is in the oven, you're free to get the rest of dinner's accompaniments ready. Michelle offers a recipe for a delicious-sounding dairy-free avocado crema, but feel free to use what you love here. If you're not following a Paleo diet you can serve the fajitas with flour or corn tortillas, or you can opt for her suggestion of butter lettuce leaves for a lighter grain-free option.

This recipe is great for busy weeknights, but I could also see it being a big hit at your next dinner party. Set out all the fillings and let everyone assemble fajitas to their own liking! Bonus: Cleanup will be a breeze since you only used one pan.
