When I think of boxed cookies, Nilla Wafers are the most iconic and representative example that come to mind. These crisp, airy little wafers were a staple of kindergarten snacks and the base of more elaborate grown-up desserts (like homey banana pudding). But these classic wafers don't have to come out of a cardboard box; you can make them yourself!
Stella of BraveTart shows us how, with this recipe for fresher homemade wafers. You can even eat them warm (and soft!) for a whole new Nilla Wafer experience.

I wish I hadn't just sworn off sugar etc for the next 6 months-- will have to bookmark this nilla wafer wannabe recipe for the summer~! thanks :)
Making them sounds pretty tasty, but I am more than satisfied with the ones they sell at Trader Joes. They're basically like crack to me.
I echo the vote for Trader Joes vanilla wafers. Unbelievably irresistible.
Thanks for this! I won't buy the Nilla because they have HFCS- so now I can make em'!!!
Oh my goodness...I love Nilla Wafers! I definitely have to add this to my recipes I must try list :) And I'll make sure to recommend it to this Cookie Exchange list.
