Hi my name is Sarah Rae Trover and I love me a Reuben Sandwich! It makes my top 5 list of favorite all time comfort foods but I have one large problem with making them at home — I don't really want a full loaf of rye bread hanging out for a week. This recipe fixes that and even makes them easy to eat at work or on the go!
While reading through the blogs yesterday I mentally tripped over this post from Simply Comfort Foods. It was immediately forwarded to everyone in my entire family and my husband and I even headed to the store with a short shopping list late last night.
The idea was simple. Fill egg roll wrappers with the same thing found in a Reuben sandwich and dip in the traditional dressing. It was genius. It was all of that meat-y, kraut-y goodness without the mess that's so often associated with things. The best part? They go in the oven. No fried foods here, just bake and eat.
In addition it means I don't have a loaf of rye bread hanging around the kitchen for a week. When cooking for two it's easy to feel forced to make 8 sandwiches and eat them all week or find other ways to put the loaf to use and although I like the taste of it, it might not carry the same joys on Wednesday that it had on Monday. What do you think of the idea? Are you as in love as I am?

Fantastic! I too am a ruben lover. I've done something similar with philly cheese steaks. Super yummy. You could really egg roll wrap anything!

Great idea! But the recipe linked requires frying, not baking. Did I miss alternative one that can be baked? Thanks.
I agree with Samantha! I'd love to have the baking instructions. Deep-frying scares me in many ways.

Samantha/Ann The Brave - Many apologies on the frying! I saw them on the baking sheet and assumed. To bake instead of fry, just spray a baking sheet with olive oil and place the rolls on. You can lightly brush or mist them with oil as well if you wish. Bake at 375-400 for 10-15 minutes until golden brown!
I...I can't past thinking of rye bread as a problem.
I think adding a few carraway seeds to the filling would help the people who would miss the rye bread too much!
I keep all my bread in the freezer, so a loaf for Reubens isn't a problem.
alejandraramos - You can also buy kraut with extra carraway in it!
OK yum. I think I've seen these on a restaurant menu at some point in the past...
What alejandaramos said about the caraway is true. When I was figuring out how to make the perfect reuben pizza and nailing down a Neopolitan-style rye crust that would work in the wood-fired oven, I discovered it's the make it or break it ingredient.
That and homemade thousand island dressing!
Bread+freezer= reubens on the fly.
