go-to cake: n. A deceptively simple cake, often single-layer, made over and over, usually from memory, always for last-minute affairs. Repeatedly pleases crowds. Does not require special ingredients (see: marzipan).
What? You don't have one? Ok, steal one of these.
We started thinking about a go-to cake after reading a post over at Sweet Paul. He makes a chocolate cake with only six ingredients that lends itself well to all sorts of toppings- fresh fruit, ice cream, whipped cream, or simple powdered sugar.
Our go-to cake is similar. It's a chocolate ganache cake from Barefoot Contessa Parties that bakes in one pan and is always a hit. A go-to cake should be just that: something that looks more difficult than it is, something you can whip up when you're tired, something you know will turn out well.
Here are some candidates to try out:
• 1. Chocolate Pound Cake with Peanut Butter Glaze, from Martha Stewart. We're starting with a bang here. Pound cakes are always foolproof bets, but the peanut butter glaze puts this over the top. Over the top and into our mouths as soon as possible, thank you very much.
• 2. Sweet Paul's Easy Chocolate Cake. The cake that first got us thinking about our go-to. This sounds quick and rich.
• 3. Nantucket Cranberry (or Blueberry) Pie. We love the hint of almond in this cake, and you can use frozen fruit.
• 4. The No-Mixer, One-Bowl Cake Recipe. A simple, buttery cake that can be customized a dozen different ways. We love the idea of layering it with jam.
• 5. Orange Cornmeal Cake, from Martha Stewart. Most of us have cornmeal hiding in our cupboards. This also calls for olive oil (mmm). The only fresh thing you need is an orange.
So those are our suggestions. What are your favorite go-to cakes?

The One-bowl cake looks so great, but it has an "additional granulated sugar" step in the process that isn't listed in the ingredients, so I never made it.
That orange-cornmeal cake is very close to a fantastic polenta cake they make at I Coppi restaurant (it was my wedding cake--I cheerfully sacrificed looks for flavor), and it is very good and very easy. I'm still messing with it, trying to make it more like I Coppi's. (I think they use a ton of olive oil.)
Extra great with vanilla ice cream.

The chocolate cake recipe that is in the back of the Sorrento ricotta cheese container. It's delicious. And I'm not a huge fan of ricotta, but I LOVE it!
Sweet Paul's chocolate cake is incredible. I cooked it up in a skillet the other night as I didn't have a cake pan on hand. Soooo good and everyone asked for the recipe.

One of my favorite go-to cakes is this French Yogurt Cake posted on Orangette. I can't believe that was 6 years ago!
My other is a Victoria Sponge that I make from a reliable formula: equal weights of eggs, sugar, flour, and butter, just enough milk to hold it together and a bit of vanilla and leavener. Scales to any size from mini to maxi.
I agree with Slow Lorus - Orangette's French Yogurt Cake. I didn't know it was six years ago, either!
Crazy cake! (also the base recipe for the vegan cupcakes featured on this site a week or two ago) It's the easiest, most delicious chocolate cake recipe ever. I've seriously had it as my b-day cake for as long as I can remember. My suggestion: make a simple single layer cake, frost with vanilla buttervream frosting and then pour a dark chocolate ganache over the top (all components must be completely cooled for this to work). Little bits of vanilla buttercream will still peek out around the base and the ratio of cake:frosting:ganache is PERFECT.
This apple crumble cake is one of my all-time favorites--not too sweet and plenty of apple goodness.

My go-to cake is Hearts and Minds Cake that I found on the interwebs.
200g dark chocolate, 200g butter, 200g sugar, 5 eggs, 1T flour.
melt chocolate and butter together, cool, add eggs one at a time, add flour. bake 350F 20ish minutes.
so awesome i tried it with chili chocolate with cacao nibs and it was a hit.
My favorite go-to cake is a Raspberry Buttermilk cake from Smitten Kitchen (I think...). Even our friends that don't care for sweets ask for seconds. So easy to make, light and just the perfect amount of sweet.

Wacky cake! My grandma taught me how to make it and it couldn't be simpler. No eggs, milk or butter but super moist. Besides, it's made with ingredients you have in your pantry anyway. I "frost" mine with chocolate whipped cream. It gets even more moist after a couple of days in the fridge.

I had a true craving for chocolate yesterday, apparently. Saw the recipes the night before, went to work the next day, came home about 5:30, made dinner for kids and at the same time made "Sweet Pauls easy chocolate cake." Popped it out of the oven at 7:00 and headed off to parent teacher confernces. Was it worth it? Yes, super easy to make and super good.
