What's cooking this week in America's kitchens? Here's a look at some of the major newspaper food sections from around the country.

In Washington, D.C., they have a bright spotlight on Spanish food, with a look at the Central Market of Valencia and golden paella soup. Also: Asparagus-ricotta pasta.

In California there's a crispy trout dinner, nasturtium risotto, and the rise of biodynamics in some of San Francisco's hottest kitchens.

In Illinois the Chicago Tribune talks about BoyzNiteIn - a gourmet cooking group of a few buddies who get together to cook things like homemade sausage with orecchiette and smoked and seared two-spice pork tenderloin with homemade salsa. They also offer recipes for crustless mini cheesecakes and French crepes.

And in Missiouri the St. Louis Post-Dispatch talks about a local entrepreneur who wants to revolutionize meat substitutes. They also look at a slimmed-down Reuben and give tips for great deviled eggs.
