Potstickers may be my go-to meal for a long day of travel, but if I have to get out of the house before dawn to catch an early flight or hit the road, only one breakfast will do: avocado toast.
Avocado toast does double — no, wait, triple — duty here. First, it can pass through security without raising any alarms. Second, I know it will keep me satisfied for many more hours of travel to come. And third, it feels like a treat, which in my opinion, is the proper way to start any trip.
I usually make two slices of toast and let them cool. Then I smoosh avocado onto both slices, sprinkle with sea salt, and sandwich them together. Wrapped in a paper towel, this breakfast can be easily tucked into a bag for later nibbling. The toast isn't as crispy as when first made, but when compared to other road-food and airport breakfast options, I'm not complaining.
