We're away on vacation this week so we turned to our foodie friends and offered them our CSA box. Their feedback: "The CSA box was amazing this morning! We could easily turn vegetarian this week." That's how I've felt all summer!

How I'm Going to Eat It All
Beets: This (golden) beet and barley salad with rainbow chard looks delicious and would be the perfect dinner side dish with lunch leftovers. And yes, the recipe calls for golden beets, but I'm sure the ones in this week's CSA box will be perfect, too!
Eggplant: Four eggplants!?! I'm certain our friends gasped when the saw this bounty. But it's the season, and here are a few great recipes to get your creative juices flowing: grilled eggplant burgers with halloumi cheese (the recipe also calls for parsley!), lentils with broiled eggplant, and roasted eggplant caviar. Oh, and if you haven't yet tried this roasted eggplant salad with smoked almonds and goat cheese, you must. It's a household favorite!
Slicing Tomatoes: There's bound to be more than a pound of tomatoes here, and to me, that spells soup! I'd like to try this Egyptian tomato soup, especially since the weather has turned cool where we're vacationing.
Cherry Tomatoes: We usually spend the last few weeks of summer vacationing in a place where the tomatoes are the sweetest I've ever tasted. We feast on fresh tomato salads made from all kinds — heirloom, slicing, and cherry — and all colors. This tomato salad recipe sums of the simplicity of what we serve on nearly a daily basis.
Heirloom Tomato: I can't wait to hear what our friends did with this beauty! I think we'd opt for this heirloom tomato and burrata salad. What have you made from your heirloom tomatoes this summer?
Summer Squash: I'm really curious about this summer squash with baked eggs recipe! Looks fantastic. But since there's definitely not two pounds of squash in this week's delivery, I'd try a scaled-down version of this recipe for just me and my husband.
Green Beans: Do you serve eggs for dinner? I do, and usually more than once a week. They're easy, and we always have at least a dozen in the fridge. I think we'll try this recipe for green beans with almond pesto under an egg the next time we receive a CSA delivery of green beans!
Kale: Dino kale is delicious! It's nutty and tender, and doesn't leave you with the bitter taste notorious to curly kale. I'd love to try this recipe that apparently highlights its deliciousness: Cavolo Nero Kale.
Yellow Onions: So many onions. So many. Here's a roundup of appetizers with caramelized onions that could easily inspire the planning of a dinner party, and this recipe for baked mushroom risotto with caramelized onions looks yummy!
Shallots: Maybe my friends WILL eat poultry one night this week? I'll be certain to check-in with them and let you know next week. But how yummy is this recipe for chicken with shallot-apricot sauce?
Cubanelle Peppers: Whoa, check out this 2007 recipe for DIY cooked tomato salsa from the archives! And if you're not up for that, what about adding a cubanelle pepper to this frittata?
Jalapeno Peppers: Peppers are definitely in season! I'm sure we'll receive our share when we return from vacation, so I'm looking at these jalapeno corn cheddar corn muffins or maybe this smoky corn and jalapeno dip.
