Having grown up in the Central Midwest, most salads come burdened with heavy cream based dressings. It's still my gut reaction to slather everything to high heaven, so to counteract that I've been tossing avocados in my salads. That creamy, better-for-you fat satisfies like a classic ranch! So when I came across this simple salad with a killer dressing from Phyllis over at Dash and Bella I was all over it.
The dressing gets its flavor from smashed shallot and anchovies and whatever fresh herbs you happen to have from the garden. But the best part are the bowls that the avocado creates for the dressing. Yum!
