Folks, I have a serious squirrel problem in my backyard, and my tomato crop has suffered greatly. It's a daily race to beat the critters to the newly red tomatoes, so maybe instead I'll just make this pie and enjoy the fruits of my labor before the tomatoes ripen.
I stopped in over at Honey & Jam to see what Hannah has been up to and to my surprise I ended up with a new pie recipe to make. The catch? It's made with vegetables and tastes like sweetened fruit!
This recipe is a little tangy from the unripened tomatoes and a little sweet and spicy, the perfect mix she says with fresh honeycomb if you can find it or a bit of vanilla ice cream. It sounds like the perfect remedy for all those small tomatoes that you just can't wait to ripen or might be under squirrel attack like in my garden! Want to see how it's made?

Still calling tomatoes vegetables?
This reminds me of the green pumpkin pie from The Long Winter in the Little House series! And looks delicious.
Yum. A friend recently invited me over on the spur of the moment - while we were chattIng in the store - for her version of tomato pie. Yup, I went home with her. A completely dif recipe (no added sugar - the fruit was sweet enough on its own). It was mouth-watering & I left with a slice for the dh AND The Recipe. Gotta try this one & soon! Got tomatoes comin out my ears again now the hot spell is over & they're out of dormancy. BUT...more importantly...I WANT TO WORK AT THAT CAMP!!
Correction....I want to OWN & manage that camp. After all these years, I think I've finally found my *dream job*. My Dad would be proud.
