Mushroom, Onion, and Blue Cheese Stuffed Potato

Add the pungent, earthy, and sweet trio of blue cheese, sautéed mushrooms, and onions and you'll never see baked potatoes in the same light again. This stuffed potato brings together the elements of an indulgent steakhouse dinner — minus the meat — to turn the classic side dish into the main course.

How to Make This Mushroom and Blue Cheese Stuffed Potato

Use a white or sweet potato — your choice. Heat about 1 tablespoon of olive oil in a medium sauté pan over medium heat. Add about 1/4 cup thinly sliced onions and about 1/3 cup thinly sliced mushrooms, season with a pinch of salt and pepper, and cook, stirring occasionally, until the vegetables are soft, about 5 minutes. Remove the pan from the heat and stir in about 1/4 cup of blue cheese.

Cut the cooked potato lengthwise and gently pull it open without splitting in half, then use a fork to fluff the inside of the potato. Spoon the filling into the potato and serve immediately.
