I like spinach and beans on toast. So comforting and delicious, but actually quite good for you too. Specially on homemade oatmeal/nutmeg/pepper bread!

Try whole grain toast topped with fresh ricotta, sliced hachiya persimmon, black pepper, coarse salt and olive oil.
I love scrambled eggs on toast with jam. May sound weird, but dessert omelettes are an actual thing. The egg's richness complements the sweet jam.
Also, just plain old avocado. With salt. Try on a sesame bagel.

I've been playing around with different sourdough recipes this past week. Last weekend I received an amazing package from Cowgirl creamery. My diet of late has pretty much consisted of toasted thinly slice Pain Palladin (from Bouchon cookbook) and Mt Tam cheese. Yum!
Sometimes for a quick meal I make toast with avocado, scrambled eggs, loads of hot sauce and cilantro and green onion. It's soooo good, especially if you scramble the eggs with garlic or curry paste (or both!).

Oh my goooooodness. I am not a big fan of mushrooms on toast like in the picture, because button mushrooms from the store are often Pretty Bad, but last night I bought fresh matsutake mushrooms, cooked them up with butter and ate them on toast. SO amazing. Good mushrooms are so, so, so worth the money (or time, if you have a local mycological society to assess your foraging haul).
I love a slice of toasted, crusty bread with lightly salted butter and honey. Or unsalted butter and truffle salt. Yum!
