We never have mayo in this house, but we love potatoes.
This one is nice! Honey roasted potato salad with arugula and pecans.
Here's one with lightly cooked tomatoes, mozzarella, greens, and pine nuts. Like a warm salad. (Plus patatas bravas with mayo-free almond aioli)
Here's one with boiled potatoes mixed with every herb (and a few greens!) from my garden.
Roasted potatoes with roasted cauliflower, zucchini, spinach, and fried bread, all tossed with pesto. This one is a meal in itself!

I don't have a link to it, but Judith Jones' warm potato salad in her The Pleasures of Cooking for One is spectacular - no exaggeration there.
The best is: Red potatoes, olive oil, lemon, dill, parsley and s&p. Fresh and delicious!
I do mine with roasted fennel in a lemon mustard vinaigrette. Mmmm.
I make a warm potato salad with a dijon vinaigrette. Lots of red onions, fresh parsley and chives, and a big handful of capers make it truly addictive!
While I'm not allowed to share Mom's recipe, I have yet to meet a German Potato Salad I didn't like.
