Mashed potatoes are a Thanksgiving classic. No one can argue with that. But sometimes you want to mix it up. Sure, you can add sweet potatoes to the mix or mash parsnips or other root vegetables, but what if you want to stick to the good ol' white potato but yearn for a bit of variety this year?
We get it. Whether for the Thanksgiving table or for comforting weeknight meals this fall, we've found a few potato recipes that will satisfy any craving, but add a little something new and unexpected to the spread. From a simple recipe for Hasselback potatoes (sliced and seasoned potatoes) to a rustic fried potato recipe using mustard and bacon, we think these are reason enough to put away the potato masher. At least for a few weeks.

I know those are Hasselback potatoes, but when I first saw this post, I thought they were some kind of giant bug/larvae. Not a great picture to associate with food.
I thought the same thing. Grubs for Thanksgiving! LOL.
Hah. Yeah, I totally thought it was a dish of silkworm pupae and they were going to make a puree of them.
We usually do mashed & delmonico potatoes.
My mum used to be called on to make those Hasselback potatoes for every big family meeting. We call them concertina potatoes though.
We'd alternate spending Christmas or New Year's Day with my mum's (smallish) family or my dad's (largeish) family every year - so New Year's and Christmas with dad's family one year, and with mom's the next.
And every year for 5 years straight my mum would make those potatoes - which is why I recognised them right away :)
No she makes a butternut bake, with half the sugar the recipe says, or fructose for my sucrose-intolerant aunt. Yummy!

We usually have more potatoes than we can handle from our CSA box. Recently I made some potato and chorizo tacos, using two pounds of potatoes, which made dinner and then a few weekend snacks. Was a great way to use them up.

The first night we did soft tacos, but over the weekend we pinned the tacos together with toothpicks and fried them, and with the quick avo-tomatillo salsa I made, they were actually incredible.
