Thanksgiving was a real success this year! We made everything we wanted and managed to not keep our starving family waiting for too long. We did seem to make the most food we've ever made and now we have a refrigerator filled with leftovers. Luckily we still have family staying, so with the help of some inventive recipes — we'll be eating freshened-up Thanksgiving leftovers all weekend!

Right now we're have a casserole of leftovers in the oven - shredded turkey, brussel sprouts from the garden sauteed with hungarian pancetta (it was a gift, we have no clue what the real name is), gnocchi made from leftover mashed sweet potatoes, all mixed with a cheesy roux made with all the leftover bits from the thanksgiving cheese trays.
Every year my family makes several Shepherd's Pies with all our leftovers. They are AWESOME.
We use a pie crust but I think it would be just as good or better by pressing leftover dressing into the bottom as a crust!

We did Turkey Cuban sandwiches, Turkey soup and Pulled Turkey (a la pulled pork, Carolina style).
We always do Turkey Croquettes. My mom makes the best! She gave me her recipe for thick white sauce so some time we may try and recreate it!
not to toot my horn....ah hem.....but i just made THE BOMB leftover turkey pot pie. you seriously won't be disappointed with this baby.
