We're suckers for shortbread, apricot jam, and sandwich cookies. So when we saw these beauties over at Tartelette, we thought, "Three for three. Score."
Helen, the French ex-pat behind Tartelette, adapted this recipe from a Better Homes & Gardens one that originally called for sage instead of rosemary. We think we'd prefer rosemary anyway, and the combination of crumbly, buttery shortbread with an herbal note seems like it would perfectly complement sweet apricot jam.
And the colors just look so sunny. Here's to summer! We're planning to make these soon.
