January signals a return to healthier, more restrained eating after the holidays, but it's also still cold outside. I find myself craving a warm cookie from time to time, but I really don't want an entire batch lying about. So this recipe for just two chewy, gooey chocolate chip cookies is totally brilliant!
Joanna Goddard pointed out this recipe last weekend and I couldn't help but share it here too. This recipe is quite quick and easy, and yet it turns out a pair of truly chewy and delicious chocolate chip cookies.
This could hit the spot when the craving for a winter sweet hits, or when you want to bake up a small treat with a child. It's definitely going on my must-try list!

I'm really bad at math and measurements, this kind of recipe is perfect for my 19 month old daughter and me!
Faith - I love chocolate chip cookies but tell us about THE WEDDING.
I just make a full batch, roll out balls of dough and flash freeze. Just bake off a few whenever the mood strikes. Also good for last minute guests.
looks great but if i'm going through the trouble, i'm producing more than 2 cookies! I too, freeze and save the dough for next time.

I just did this last night! It took about 10 minutes to whip up the dough and the cookies were great. The only thing I would add is that they way I divided the dough, it made three 4" cookies. Oh, and it felt a little wasteful to heat an entire regular sized oven for 2 cookies.
As far as the difference between this and the freeze-and-save method: it's a little more effort each time you want a cookie, which is a good thing if you're trying to control temptation. It's much easier to pop some frozen cookies in the oven rather than start them from scratch and sometimes that can make all the difference.
I also like the idea of doing this with a child and enjoying the one cookie each in the end. A great way to have your cake ... err, cookie and eat it too!
@Dana Velden: I agree about the oven, which is why i'm in love with my toaster oven! Gets me through the (literally) 118 degree days of summer, too.
Slice and bake is a really good plan if it works for you, but some of us have a problem ignoring cookie dough even if it's cleverly hidden in the icebox. Out of sight is not always out of mind.
In fact, this recipe would likely yield one cookie for me since I'd just eat half the dough straight off. Which is why it's totally brilliant that there are only two cookies total.
Are there people who really only make two cookies? Come on, confess. You don't actually only make two cookies, right? And more importantly, who can just eat two cookies?
Pfft. If I'm going to go to the trouble of making cookies, I'm going to make more than two. Just a little self control or utilizing the freezer for me.
A little self control is difficult to come by if you have expended a lot of it over the course of the day, since it is a finate resource. I love the idea of being able to make just too cookies. Totally going to have to try this.

I love this! To those of you who do the freeze and save method, you have way more self discipline than I do. Even if the dough is frozen, I still dig into it. So this two cookie recipe is just what I need!
that sounds annoying... just make a whole batch then freeze all but 2 cookies worth of dough. so much easier next time you only want 2 cookies.
