A peeler makes quick work of a fresh salad with whatever vegetables you happen to have on hand. It creates thin, quick slices and takes up less space than a mandolin. There's a certain stigma involved with prep work, and sometimes you're just looking for a 30 second lunch which is exactly what this trick affords you.

I do this all the time, particularly with carrots. I love it, personally. it's a great way to make those harder-to-stab vegetables easy to incorporate into each bite without shaking the leafy veggies from your fork!

Yes, this is a great idea. I like my salad with "carrot curls". In addition to be being easy, they are beautiful, too.
I do this all the time, too. I've never managed to cut myself this way, but I have definitely done some damage with the fancy julienne gadget I decided would be safer and easier. Sigh. (Also, someone needs to get that gal a new peeler, that one's seen better days and looks like it might be adding a little bit of unintentional something to the salad.)

it's also good for letting your kids help with meal prep, if their not ready for a knife.
my son use to get slices of cheese this way.
and i agree with surfjack, that peeler is looking like my dog got a hold of it.
