I never liked avocado growing up, but have since completely changed my mind. I have a favorite guacamole, but I also love it on a great BLT, topping chili or gazpacho, with eggs, or just spread on a slice of toast with a little salt. It's just so creamy and delicious!

I also do avocado toast, but mine has lemon and honey in it as well...my favorite! I also love avocado pesto as a change from pesto genovese.
I had an avocado margarita at a restaurant a few days ago. Can't say I would have it again, but it's the first time I've gotten some vitamins-other-than-C from a cocktail.
Avocado for dessert! There's avocado, mangoes and milk (my absolute favorite), avocado ice-box, avocado smoothie, avocado ice cream. I could go on, but I just remembered that I need to harvest the rest of the avocados from our tree.
I like to use it mixed in with the yolks for deviled eggs. Seriously delicious.
I am also very content to cut one in half, scoop all the insides into a bowl, sprinkle with salt and eat as an afternoon snack.
I feel like theKitchn is always reading my mind. Our naturopath just told me to make sure my son gets some avocado every day. Not an easy feat for a picky 2 year old!! We've just found out that he's intolerant to dairy and she wants to be sure he's getting some good fats every day. I'll definitely try a few of these recipes - the fries, smoothie, breakfast pudding.
