Leeks are one of those vegetables that unfortunately not enough people eat and just wonder what they are as they pass them in the produce aisle. Initially they can be rather intimidating but even in the most simple preparation they can be seriously luxurious.

That strawberry and leek quesadilla sounds weird but is truly amazing, I encourage all leek-lovers to give it a try!
Don't forget about braised leeks! I love them so much - so simple, but a big pile of them makes a wonderful side dish. I particularly like this version from Epicurious:

I also really love leeks paired with potatoes. I just made a potato-leek gratin for dinner tonight - paired with a crunchy green salad, it makes a spectacular dinner. I used this NYTimes recipe:

I keep getting them in my CSA box and end up trying to use them up (toss in soups or casserole), rather than feature them. Not sure about some of the recipes you mentioned, but the braised leeks mentioned by @Eatsimpleeathappy sound interesting...
