How excited would you be to find one of these roll-ups waiting in your lunchbox? I think very. And if you're noting a striking resemblance to a certain Little Debbie snack cake that many of us know and love from our own time in grade school, you're not imagining things. Shelly from the blog Cookies & Cups shows us how it's done.
To make these roll-ups, Shelly says we need a batch of brownies, a batch of frosting, and a rolling pin. Check! Then all we do is squish the brownies flat between wax paper, spread with frosting, and roll.
I love how this takes an ordinary treat and makes it something extra-special. Shelly says we shouldn't feel limited to just frosting, either. Imagine a roll-up with marshmallow fluff or nutella. Or a blondie brownie with chocolate frosting. There are lots of very excellent and tasty combinations to be made here.

OMG MARSHMALLOW FLUFF. What. That sounds amazing. Except I like the cake part of the swiss cake rolls too. Not sure how brownies would be.
I'm thinking the Strawberry Cream Cheese Frosting from Cook Country Magazine's Strawberry Cake would be an excellent filling. I see that in my future :)
