In honor of spring, before things really warm up, here's a look at 15 of our favorite lemon recipes. Lemon and other citrus have their peak season in the winter, when they are flown in from warm places in big shining heaps to remind us of sunshine. But as winter brightens into spring, I always feel that lemon is the flavor to take us there. Lemon's spritz of scent and bite of flavor taste of spring sun and brightness, its juice livening up the first salads, and its zest making cakes fragrant and delicious.

Love these recipes! We planted some Meyer lemons and are beginning to get quite a few from the new trees. Our main crop is avocados. Always glad to find ways to use our produce!
I preserve meyer lemons a la Eugenia Bone's "Well Preserved" and use them all spring long with asparagus, quinoa, cous cous, ramps etc. for great healthy grain salads. The preserved lemons turn the simplest veggie dishes into a treat.
Personally I love playing with different aspects of lemon in the same dish.
Mario Batali's Lemon Oregano Jam. It is a delicious, savory condiment. I love it with grilled chicken and chorizo skewers.
