We have been thinking a lot about muffins this week; we often neglect to make muffins, and we wonder why! They are quick, easy, and simple to clean up. They are great little snacks during the day, and they are awesome for grab-and-go breakfasts too. So we were really pleased when reader Elise sent us this tip about a pumpkin chocolate chip muffin recipe.

Thanks so much for sharing this recipe & the scrumptious images ... soooo, now I have to make some! Love sweet breads & pecans; so, I usually add pecans to the batter. I had my first pumpkin pecan muffin at Einstein Bagels years ago & fell in love. I couldn't wait to get home & make my own!
A few weeks ago, I experimented ... tweaked a Williams-Sonoma pumpkin bread recipe by using coconut oil (instead of another nut oil) & added chocolate chips, pecans, vanilla extract, cinnamon, nutmeg & fresh minced ginger to the batter. They were a success at home & at a recent holiday get-together. BTW, Williams-Sonoma's "Muffins" & "Baking" cookbooks have some delish recipes as well.

I would've never really thought about this combo but it looks great!
Made these this weekend - delicious. One note - these make 12 large muffins. I like smaller portions so next time I'll divide it up into 18 or 24 muffins. Uber yum.
@AKwinter I realized the same thing when I was pouring out the batter, so I went with 18 and they were the perfect size!
One leftover can of pumpkin puree from Thanksgiving. 3 cups of flour sufficient; added bar of bittersweet chocolate.
After sampling TWO (texture amazing), added sprinkling of raw sugar. Just right!
