Look! Two Quick Fig Tarts

Fresh fig tartines are our breakfast/lunch/dessert of choice these days, but we've just been inspired to mix things up with these two pretty, and speedy, little fig tart recipes from The Food Librarian and Stonesoup…

The ingredients list for the Food Librarian's tarts is short and sweet: "Fresh figs. Puff Pastry. Butter and sugar. Yum Summer Fun." We love how the fig looks nestled in a bed of pastry and the flower-shaped cookie cutter is a great touch, too.

A second lovely idea comes from Stonesoup, who simply tops a biscuit or cookie (she used "Butternut Snap cookies which are a sweet oat-based biscuit") with sweetened ricotta cheese, figs, and honey. Perfect for a quick snack or dessert.
