Are you familiar with pisco, Peru's national spirit made from grapes? Mixed with simple syrup, lemon juice, bitters and egg white, it adds a unique component to a classic sour cocktail. But doesn't it sound great as a sorbet?

It looks absolutely scrumptious--but one *cup* of lime juice seems like a lot of limes to squeeze. Might halve the recipe.
Definitely intrigued, though. Love that you don't need an ice cream maker!
a common substitute for lime juice in pisco sour recipes is lemon juice. I know it's not typically directly substitutable, but in this case it works!
