There are a lot of creative ways to add vegetables into your breakfast rotation. A couple weeks ago Gina talked about her new found love for breakfast salads, and of course it's easy to add some veggies into your morning smoothie. This, however, is new to me –– roasted, pureed beets in pancakes!
Due to the natural sugar found in beets, when they are added to you pancake mix you can omit some of the sugar! A rather healthy breakfast all around, wouldn't you say? That beautiful blueberry-like color doesn't hurt to wake up to either.
