There are a few reasons I rarely make cheesecake. First and most important, there are just the two of us at home and I can't think of any occasion that would warrant us needing a whole cheesecake sitting around the house. Second, it's not the simplest dessert to make with the fuss of hot water baths and inevitable cracking. That's why I was excited to stumble upon these individual, no-bake cheesecakes last week.
In addition to looking delicious, I love the simple, straightforward ingredient list here (If you don't have coconut milk on hand, I can't see any reason why substituting cream or milk wouldn't work). And the process couldn't be simpler; for that reason, I think these would be a great candidate to put together with kids, especially since there's no oven usage or complicated chopping involved.
You can put these cheesecakes together in pretty jars, so they're a great candidate for party desserts. And they bring together two beloved nostalgic desserts all in one place. I can't wait to try them!
