We polished off another small bottle of maple syrup with a post Thanksgiving brunch and I just had a feeling I'd need more sooner rather than later. If I had only listened to myself and picked up a bottle I could have whipped up a bit of maple cream tonight! Read on for the surprisingly simple (only one key ingredient!) recipe.
Doesn't the thought of thick maple cream spread on freshly baked pound cake sound like something worth trying? America's Test Kitchen shared a simple recipe for the stuff on their blog and it couldn't be easier. The key is stirring heated maple syrup for 10-15 minutes by hand. I know: it doesn't sound so simple anymore. But this is exactly why electric mixers were invented.

I make some every year at my grandfather's sugar shack. He boils the syrup to the appropriate temperature then hands up all a container full of the syrup and a wooden spoon. And then we stir. :)
I have a ginormous sugar maple at the end of my driveway. Every year, I make syrup and a batch of maple barleywine. I have never made maple cream.
WTH is wrong with me?

You can get those bail jars at the dollar store, Ikea, or sks-bottle.com But they may not have that rustic look to them.
any idea how long this keeps? I love maple cream and might make some as christmas gifts.

Target still sells a double pack of bail wire jars for about $6. TJ Maxx and Marshals and Home Goods usually have singles for under $4. Although I have just as many from scouring Goodwill and Salvation Army for vintage jars.
Might have to try this with the bottle of maple syrup sitting in the pantry.
I was at a sugar shack a few years ago where they made this in a bucket with a stirring attachment on the end of an electric drill (!). I'll probably choose a hand mixer or stand mixer...
