We still have no-bake desserts on the brain. And wow, take a look at this frozen cheesecake from Green Kitchen Stories. It has a raw crust, a filling of mascarpone and yogurt, oodles of berries — and it's pink!
How lovely and delicious — and also rather light, for a dessert. It has no sugar — just dates in the crust, and honey in the filling. We're quite smitten with this simple dessert. It's so pretty, and the whole thing can be whipped up in the food processor and then put away to freeze.

love the fresh fruit on top, looks so pretty!
The link to the recipe doesn't seem to work.
It works now! :-)
Great! Thanks : )
I made this right after they first posted the recipe-- it was very tasty and pretty! BUT: you really do have to take it out of the freezer and eat it after two hours. Otherwise it becomes rock-solid. And if you let it sit out to defrost, the outside melts while the inside is still hard. So I'd definitely recommend this for a dinner party, where you could eat the whole thing in one sitting. It was delicious.
I can't seem to get the link to work. Any suggestions?
