I haven't tried this yet, but I'll bet the speculoos spread is gonna be delicious in a buttercream frosting for cakes or cupcakes.
Lately, I've been toying with the idea of a speculoos cheesecake with the spread in the cheese mixture and the cookies as the crust. There's a lot of ways to go with that spread.
Not to mention Trader Joe's also carries chocolate bars filled with speculoos. Right at the checkstands, usually! Yum!

Instead of Speculoos (even though thats what it actually is) call it Biscoff or Lotus cookies. Most people know it as that. Yum!
I know this is not helpful but I can never not think "speculum" whenever I read or hear "speculoos".
@ atniel: I've made a lotus spread cheesecake - biscuits for the crust, layer of apple and raisins to move it a whiff of healthy, and then vanilla cheesecake with lotus spread swirled through it. It was very tasty (although too much moisture from the apples- next time I'll starin them a bit or something). I was foolish and thought I needed to warm the spread to get a successfully swirl, I made it too runny, I'd recommend either mixing it into the mix so there's a slight hint of it throughout, or use dollops of it, and maybe swirl the dollops a bit.
Trader Joes also sells the actual Speculoos cookies under the name "bistro cookies", around $2. The spread is basically those same cookies crunched into a powder and mixed with terrible-for-the-environment palm oil.
How do I use speculoos? I take a spoon and dig in.
