When you read a lot of food blogs sometimes everything can start to look the same. You'll notice trends, when writers all seem to be cooking and baking similar things. Much of this is dictated by the season, and sometimes it's pure coincidence. But last week something caught my eye. Something different, something wonderful, something baked right into a skillet.
Leave it to Joy the Baker to concoct a seriously delicious-looking Banana Walnut Chocolate Cookie Cake. Of it, Joy exclaims, "this is going to be banana bread, cake, and chocolate chip cookie!" The great thing about cooking skillet desserts in the summer is that they're usually relatively easy one-bowl affairs and you can mix them and bake them in the same skillet (as Joy does here). When it's hot out, a sink full of dishes isn't welcome. A cookie cake with a big scoop of ice cream, on the other hand, most certainly is.

Interesting. Skillet baking is something that can be adapted to a gas grill....which is handy when it's eleventy billion degrees out and you don't want to fire up the oven....like....now...
Can these be made in a non-stick pan?
This is interesting... kinda like cornbread in a skillet, but cake! I think I might adapt my Yogurt, cinnamon, hazelnut and chocolate banana cake with the skillet idea - extra yum
