Saturday evening we celebrated another Independence Day. This one was in honor of the first Independence Day for the people of South Sudan, and it was observed with a communal thieboudiene dish prepared by my brother:

He learned to prepare the dish while serving in the Peace Corps in Africa. Since then, I gifted to him a very large ceramic dish for serving such communal meals and this South Sudan Independence Day celebration was its inaugural use. It worked well for serving a tableful of us and was large enough for the rice, fish, okra, turnips, potatoes, squash, carrots, eggplant, cabbage, and mussels that he chose to include in the dish. Check here for the full recipe. (Thanks, Mike!)
