There are just so many wonderful things going on in this soup it's hard to know where to begin, but I'll try. First, the bowl the soup is in is actually made out of squash; second, there is chorizo in this soup; third, there are caramelized apples in the soup. Do you need any more convincing? I didn't think so.
I feel like the crispy chorizo and caramelized apples would just give a depth to pumpkin soup that it normally lacks. This would be a great starter for Thanksgiving dinner, or a nice main course for a dinner party.
