Our server laughed and told us that a friend of his makes "pizza omelets." When he has cold pizza left over from the night before, he peels off the top layer of cheese, peppers, onions, and whatnot, and throws it on top of a few eggs in an omelet pan. Let the cheese melt and the toppings get hot, and then fold the eggs over. Voilà! Hot breakfast omelet, instead of cold, congealed pizza.
Depending on the toppings, this could be kind of a genius way to repurpose leftovers. What do you think? Would you try a "pizza omelet"? And which toppings do you think would work best? I think that a tomato-basil-mozzarella pizza would work well; Hawaiian, though? Not so much.
