The Olive Oil Marinated-Goat Cheese does use a few fresh herbs and needs to marinate for an hour, but by the time people start chatting and catching up, an hour whizzes by in no time. If you don't have walnut oil on hand, omit it for additional olive oil. Let the unexpected entertaining begin.

My favorite last-minute appetizer is this artichoke and olive dip from Gourmet.

Unlike the usual mayo-riffic artichoke dips, this one uses olive oil, garlic and salt and whips up in a jiffy. I've made it plenty of times without the olives and it's fine.
They key is to whir it in the food processor for several minutes, so it gets really creamy and light-textured. It's great with pita chips and/or veggie sticks.
Heh, if anyone drops in unannounced then anything beyond a cuppa is their own problem as far as I'm concerned - should have called ahead if they wanted me to do something about their dinner!
