Now here's some summer vacation inspiration! Sara, Matt and 3-year-old Bella were recently featured on AT:San Francisco. They live in perhaps the ultimate small space: a vegetable-oil-powered RV. They're crisscrossing the country talking about sustainable living -- all from their fully renovated RV.

We were madly curious about their kitchen, since "sustainable living" - wherever you live - definitely doesn't involve a lot of takeout or fast food. How do you equip an RV kitchen for cooking healthy meals on the go? See how below, including a brilliant covered sink...

Above: Yellow walls! And an electric teakettle. We like this place already.

This hardly looks like a tiny RV kitchen; the Janssens prioritized cooking space in their 200-sq-ft RV. This is a full kitchen - not a camping setup.

This includes a full sink.

...But it can be covered shut for more counter space! Brilliant.

There's a also a full fridge...

...well-stocked, since they eat raw foods much of the time.

Plenty of books, including cookbooks and books on nutrition.

A place for living, beautiful things.

Thanks for sharing your kitchen with us!
