We're not saying that lamb burgers are a new trend; it's not exactly culinary pioneering to make a patty out of ground meat. However, we've been seeing more and more of them on restaurant menus and in friends' kitchens lately. And thank goodness. Lamb makes excellent, excellent burgers.
Ground lamb is more expensive than chuck or turkey, for sure. But the flavor is superb. It makes a basic burger something so much more special- tangy, earthy, and extra meaty.
Pairing lamb burgers with greek flavors is fairly common; we see a lot topped with tzatziki or mixed with mint. A few of these go that route (which is delicious, no matter how predictable), and a few steer off the path a bit.
If you don't have a grill, you can easily sear these indoors in a cast-iron skillet. We like ours a bit pink on the inside.

My husband had one for lunch while we were traveling in Seattle last weekend. It was perfectly pink on the inside and almost made me wish I hadn't ordered my croque monsieur. We will definitely be recreating this at home.
Lamb burgers can be extremely fatty and if you are not careful, the meat can be very game-y. I definitely would recommend buying a piece of lamb and grinding your own burgers. You have no idea where the ground lamb comes from on the carcass or if the added fat is all lamb.
Yum, lamb burgers are so tasty. Here are some with mint and feta cooked in them, and here are some very tasty Middle Eastern lamb kebabs--just cook them in little cylinders and eat in a pita.
Lamb mince, lots of mint and some ground cumin is totally the way forwards for lamb burgers!
