I'd like inspiration for cooking for one. I have a zillion recipes that I love. My problem is I hate eating the same thing 3-4 days in a row. I would like to see how leftovers can be adapted to make something new.
I'd love some really good vegetarian or light-meat meal ideas (I tend to default to sauteed meat + side of veggies when I'm uninspired... things like red beans & rice, or the uovo in purgatorio recipe from a quick dinner contest a few years back.
I'd also love some more good stew recipes (How I love a meal that cooks while I ignore it)... I feel as though there are a lot of regional recipes that when i discover them, I love them, but they seem hard to discover. Other options are Brunswick stew or Burgoo. They are all so hearty and flavorful and cheap, and make a great week of lunches.

Quick weeknight dinners are ALWAYS a plus. I have to get dinner on the table 7 nights a week and there are times I just cannot think of a thing to cook (ridiculous--like standing in the library and not being able to think of a single author I want to read, but it happens).
Also, ideas for the seasonal transition. It's still COLD, but I don't want heavy winter food. Nor can we switch to light, light summer food. I need recipes that are the equivalent of a spring jacket.
I second the light meals as we get away from the cool weather stews and soups.
Would love to see recipes with only 5 or 6 ingredients that are quick or easy to make. When it's a long list of ingredients for a recipe, I rarely end up trying it.
Dinners with little prep and clean up, please! Often I end up having cereal or eggs and toast for dinner because the thought of prepping and then cleaning is just too much to bear.
Seasonal stuff. I always get into a bit of a rut this time of year--I'm done with heavy braises and soups, but there isn't much produce in season yet. Not yet ready for light caprese salads, etc. What to eat, what to eat...
Another vote for light, vegetable-heavy, spring inspired dinners. I still want a hot dinner, but I also want to take advantage of all the beautiful farmers market produce.
I would love to see something that might take a little time to prepare, say on a Sunday afternoon or evening, but with leftovers that can be easily transformed into interesting and exciting suppers for the rest of the week.
Inspiring spring meals...weeknight entertaining would be fun.
Meals that take verry little time to make for those who come home from work, and have only an hour before they have to go back out to do evening errands/classes/events.
Vegetarian mains- I'd love to see some new vegetarian grilling ideas!- are a plus for my mostly-veg family.
I would love to see some lighter make-ahead meals. I frequently have evening obligations, that mean I am not home for dinner until 9. Unless there is something to eat that I just have to reheat, a healthy dinner isn't going to happen...
I've seen casseroles referred to as "make-ahead dishes," but how do you reheat them without drying them out (particularly quiche or other egg based ones)? Also, how fast can that actually be -is half an hour enough? Advice before Thursday would be exceptionally helpful, as I will have to put it into practice for guests then!
i would love to see some more "fancy" meals...something to learn solid techniques and build a better cooking repertoire. also, a piece on pairing main dishes and side dishes would be wonderful...there are so many main dishes featured in magazines, but without pairing suggestions and sometimes i get stuck.
I'd also like to see healthy things, maybe with a little meat for protein, but not meat-heavy. I'm trying to cook more beans, so bean recipes are always welcome.
Also, please remember that not everyone is able to get things like pea shoots, ramps, and fiddlehead ferns. I belong to a CSA and try to eat what's in season, but we just don't get some of the more exotic products here, don't have a Whole Food or Trader Joe's, and don't have an unlimited budget.

How to combine dishes to cover as much as possible of the recommended daily intake of vegetables and fruits (meat and dairy products no problem:-)
I second the healthy casseroles suggestion. I like the idea, but the the thought of canned soup just makes me cringe.
I would love to see a layperson's list of easy, general wine pairing suggestions. I would also be very interested in some inspiration for small dinner parties.
I would like some inspirations how to combine antipasti, first course, second course, dessert- especially for vegetarians. I love to cook and have many great recipes but I am often what recipes I should serve together. I think there should be a connection between the courses but at the same time they shouldn't be too similar. Tips?
I'd like suggestions on how to use up the leftover cooked chicken remaining from a roasted bird I made a couple of days prior. Somethings besides pot pie, burritos/tacos and as a topping for salad. Thanks!
I would love meals that are NOT so carb heavy. Can't eat potatoes, rice, corn, peas or beans. Getting tired of quinoa. Mine must always have a protein as well.
I'm a bit late but I would love to see more vegetarian meals with non-soy protein. I also would love some posts on easy weeknight entertaining.
