Well, it's the week you've all been waiting for. We've had breakfast, lunch, and dinner (weeks, that is) — and now it's time for dessert. It's a week of sweets at The Kitchn, and we want to know what you'd like to talk about!

Sugar free sweets, with more and more folks with diabetes, the lack of good sugar free treats shameful.
I would like to see really simple, healthy sugar-free (as in no added sweeteners), fruit based desserts ex. mango tossed with cayenne and lime juice, or roasted fruit with granola sprinkled on top. I'd like to see new ways to use fruit too, like how do you prepare and eat papaya? Star fruit? Persimmons? Pummelos?

Sorry it sounds funny. What I meant was: low calorie and fruit desserts. I lose my intelligence when it comes to desserts. :(
I'd love to see some show-stoppers. You know, best dessert you've ever had, can now die happy, etc.

It'd be nice to see unconventional desserts; that is, not just brownies & cookies all over the place. I love them to bits, but variety is the spice of life!
How about a guide to substitutions in baking? I find it easy to modify savory recipes, but baking is so much about chemistry that without specific knowledge on how to add, subtract, modify or substitute ingredients, I'm terrified to stray at all from the recipe.
How about good old-fashioned, mostly forgotten desserts? I'm partial to clafoutis (which no one seems to talk about, but which I think is fantastic) and gingerbread, but I'd love to know what other kinds of old-fashioned, ethnic desserts are out there, especially ones that use fruit and cream.
I get sick of cupcakes and frosting and cake pop posts. I'd rather have original and unusual than trendy.

I'm with vintagejenta. Old fashioned and ethnic deserts. Like kichel, or flan, or rice pudding, or baklava. The bibinka post was great!

I'll second a post on substitutions in baking.
I was doing a detox thing for about 3 weeks and I had to bake some treats that used brown rice flour and/or coconut flour. (They didn't taste too good.)
What can I make using the leftover flours?
I'd love a recipe for this moist lemon rosemary almond cake I recently ate that is perfect for spring! It's not a sweet cake like birthday cake and it's so moist you don't even think about frosting. More gluten free baking tips and more tips about substitutions for eggs, milk, and regular sugar (real experiences "from the front lines" substituting with bananas, apple sauce, even chia seeds).
Primer on how to turn dessert sauces up another notch (fruit based sauces, crème anglaise, caramel sauces etc.).
Maybe some tips on what should go into a composed dessert course.

Desserts that impress even though they were quick. I baked a cake last week based on the picture because it looked so good! That was a huge mistake; it took 2 1/2 hours before I even got it in the oven!!
Treasured dessert recipes that have been passed down thru the family....ones from grandma's old recipe box...made from scratch. One I recall was a homemade angel food cake topped with the best light drizzled glaze.
I'd really appreciate some posts on healthier or low-sugar desserts. Preferably NOT low sugar desserts that have alternative sweeteners added (splenda, agave) - but desserts that get their sweetness from fruit, or are just less sweet in general.

Old-fashioned desserts from books that are hard to find in print. What about a post on southern tea cakes? Of course, there are desserts for those who want to use less or un-processed sugars, how to convert fave recipes for this, as well as gluten-free options.
Since it will be soon warming up around her all I want especially since I have allergies and sinus problems all I want are cool and creamy. I have some silicone push pop like molds and your basic Popsicle molds I would love some great Popsicle, creamsicle and other sorts of cold creamy goodness.
